Spring Egg Noodles
I wanted something light, tangy, but warm today. Sort of "light" comfort food for the millionth rainy cool day in a row. I rattled around the kitchen for a while, and this is what I came up with :DSpring Egg Noodles
- 16 oz. Egg Noodles
- 2 Medium Onions
- 1 clove garlic
- 1 tsp. Kalonji
- 1 tsp. Garam Masala
- 4 tbsp Olive Oil
- 1 c. tomato juice
- 1 tsp. sugar
- 1 tsp. Cornstarch
Heat the olive oil in a deep skillet. Slice the onions in thin slices and sauté with the garlic, kalonji, and garam masala until the onions are translucent and soft. Add the tomato juice and simmer for a few minutes. Stir in the sugar. Dissolve the cornstarch in a bit of warm water and stir into the onion mixture, then allow to simmer for a few minutes to thicken.
Cook the egg noodles following the package directions.
Serve the onion mixture over the egg noodles
