Easy & Delicious Sandwich Spread

This is a really easy recipe we love to whip up for a lazy dinner. It is very easy to adjust for one person or ten and the ingredients are all inexpensive, too!


You need avocados - ripe enough to be very squishy. Fortunately, when they get this ripe - the grocery store puts them on sale! The other ingredient is cream cheese - whipped is nice because it's easier to mix. And, of course, bread to spead on.


We like canned diced tomatoes with green chilis mixed into our spread also, but this does make it spicy. So for bland, leave them out, if you like it perkier, use them. You can also add chopped onions for a spicier flavor.


You will want about one avacado per person to feed. Two ounces of Cream cheese per avacado and about three ounces or so of the diced tomatoes. If you are using onions, you want about a tablespoon of diced per serving. For more people, just buy more avocados and increase the other ingredients accordingly. This should make approximately two sandwiches per person.


Slice the avocados in half, scoop the seed out with a spoon, and scoop the pulp into a small mixing bowl. Add the cream cheese, and tomatoes and onions if wanted. Mix thoroughly with a fork or mixing spoon and voila' your ready to spread and eat!

Chips or fries are good on the side, but they are also a good meal by themselves.
