Super Salad

I never would have believed it. We have done really well at staying 50-75% raw food over half the winter. The hubby and I are both big into comfort food, and that nearly always means COOKED in the winter when we are perpetually too cold. So I am pleasently surprised to look back and realize we are eating so much raw food.

One thing that has really helped is I have set the hubby to "grazing". Eating six small meals or so a day, with a somewhat larger "dinner" meal. Not only does it seem to set better with his digestive system, but he is eating more raw food. He loves the baby carrots for quick snacks, as well as brocolli, celery and fresh fruit. His family has no idea what fresh, raw food is, so it has also been a learning experience for him. I finally got him to try Tangelos - and he loves them.

Carefully chosen snack mixes - dried fruit and nuts, no chocolate chips please, make up a good many of his snacks, too. Applesauce in the small packets has been a winner, too.

But I titled this super salads. He grew up with the two leaves of iceberg lettuce and maybe a slice of tomato being called a dinner salad. What a nut he thought I was the first time I made a salad. I put all sorts of things on salads. So here's a short list of some of my favorites:

  • raw sunflower seed nuts
  • beans (canned, cooked beans give a nice earthy flavor - kidney, fava, and garbanzo being my favorites)
  • corn - yes, canned corn or those tiny little cobs sold with oriental foods
  • Peppers - all sorts, any kind, cut up into smallish chunks or slices
  • soynuts
  • fried dal
  • chopped celery
  • Anythign green and leafy - why stick to boring old iceberg lettuce? Try mustard greens!

And a particular little vice - if you check the ingredients a lot of those "bacon bits" are actually SOY.

You should see his family back away from the table in fear when I bring a "salad" to a family gathering...

*evil chuckle*

Oooo - one last little hint. If you like southwestern or Mexican type food - try mixing picante sause half and half with yogurt for a spicy dressing!
