Quick, easy, cheap - what's not to love?

Vegetarian Goulash


  • 2 boxes Macaroni and Cheese

  • 12oz. Your favorite ground burger replacement (like Boca or Morningstar)

  • 18 oz. (1 bottle) your favorite barbeque sauce

  • 1 Onion, chopped

  • 1 yellow pepper, chopped

  • 1 tbsp. Chili powder

  • 1 cup frozen corn


Put water on to boil for the macaroni noodles. When it begins to boil add the noodles and the corn so they can cook together. Add a bit of olive oil to keep the noodles from sticking.


In a skillet, warm olive oil and sauté the onion and pepper until tender. Add the crumbles and chili powder and let them all sauté and warm together, stirring occasionally. Right before the noodles are done, add the barbeque sauce so it will also warm up and make the house smell good.


Drain the noodles and corn. In a large mixing bowl mix the noodles, corn, the mixture from the skillet, and add the two cheese sauce envelopes from the macaroni and cheese mixes.


Makes enough for four.
