Super easy and delicious cole slaw dressing

My hubby loves cole slaw. I have quite a few favorite recipes that call for some cabbage, but not near enough to use an entire head, so he always uses it up in cole slaw. But coming up with a dressing that can be made in smaller amounts, quick and easy, was a bit more of a search. We finally found this recipe on the back of a bag of Fresh Express Angel Hair Cole Slaw shredded cabbage. Quick, easy, very easy to adjust for the various amounts of cabbage we have on hand, and he loves it.

Steve's Memphis-Style Dressing

  • 1/4 c. mayonnaise
  • 1/4 c. cider vinegar
  • 1/4 c. sugar
  • 1 tsp. ground celery seed
Pour cider vinegar into a bowl, then add sugar. Stir to dissolve. In a seperate bowl, add mayonnaise and ground celery seed together. Stire in vinegar mix. Whisk until smooth. Toss wiht Fresh Express Angel Hair Cole Slaw and enjoy!

Now if the Fresh Express people want to sue me to bits and pieces, well shit. I hope not. They don't seem to have a website, although I found them mentioned on a few other food sites. Their major claim to fame are their "salad kits", which I admit I find very handy. I prefer to add to them, but they make a great base and are especially nice if you only have two people to feed.

Now while I was looking to see if Fresh Express had a website, I ran onto the Calorie King website, which has a nifty service that gives you the calories and nutritional information on about a bazillion foods. They have a search engine which can be added to a webpage or blog - which you will now find at the bottom of the Vegetarian Blog. Check it out - handy little tool.

It is a beautiful day, and we are quite due for some nice raw food so I'm going with a nice simple salad. Every time I walk the puppy I see the wild garlic getting taller and I am so tempted. I am ready for a nice Spring Tonic soup!! I'm sure they aren't big enough yet tho - sigh.
