While in Tucumcari, NM we visited the famous Wiki gift shop. I expected a tourist trap, and was instead pleantly surprised to discover a neat little shop full of local arts, crafts, and other ephemera. One of our favorite discoveries was a book, The Burrito Lovers Cook Book by Shayne and Lee Fischer.
I have to tell you, that one of my nicknames for my husband is ¡§Burrito Boy¡¨. This is because when we met, his bachelor refrigerator differed just slightly from the usual. That is ¡V beer, milk, maybe a couple frozen dinners. My dear husband to be had beer, milk, and frozen burritos and more frozen burritos. He literally lived on frozen burritos. He loves Mexican food.
So it was a natural to pick up this cookbook and start leafing through the recipes. To my delight I discovered that all of their sauces are vegetarian, most of them vegan. The same is true of the majority of the recipes ¡V including one that actually calls for soy sausage and soy cheese for the hard core vegan, or anyone wanting a heart healthy diet. For $6.95, this little cook book is a real bargain.
It is published by Golden West Publishers, and I haven¡¦t looked, but I suppose you might be able to purchase it online, or at least find a list of local book dealers that might carry it.
Or you could drop by Tucumcari, NM, stay at one of the neat little refurbished 1940s motels, enjoy the murals on various buildings, and spend more than you ought to at the gift shop. ļ
